Chicken Pot Pie

As you know I’m all about quick and easy comfort food….so a few weeks ago I found a recipe for easy chicken pot pie.  I didn’t follow any one recipe that I found, but here’s a compilation of several:

Take a couple of frozen chicken breasts (I use the Freshly Food’s Flash-Frozen Chicken breasts that you find at Al Jazira and Carrefour here in Bahrain.) and stick em in your crockpot with a can of cream of chicken soup and some chicken broth.  Sometimes I sprinkle Herbs de Provence in with it but sometimes I don’t…it’s totally up to you 🙂

Turn the crockpot on low for about 6-8 hours.

When you’re about 45 minutes away from serving it up, turn the crockpot on high and add a bag of frozen veggies and stir em into the chicken mixture.

While the crockpot is cooking on high, break out the Bisquick and whip up some “Cheddar Biscuits“. They’re similar to a certain famous seafood restaurant’s biscuits.

For the biscuits, you take 2 cups of bisquick, 2/3 cups of milk, and 1/2 cup of shredded cheese (I always use a little more than that) and mix it up really good.  Then plop biscuit sized balls of dough on an greased cookie sheet.  Stick em in a 450*F (175*C) oven for about 8-10 minutes.  Once they’re done, spray the tops with some cooking spray (I use butter-flavored Pam).  It gives em a little bit more of a buttery taste.

If you’re cooking for only 2 or 3, I usually put the leftover portions in freezer baggies and store them in the freezer for lazy days or days where the fridge is pathetically empty.
