My parents came to visit, so I wanted to make something other than oatmeal for breakfast each morning. I looked up a fun recipe for monkey bread on Pioneer Woman. I ended up finding Monkey Muffins. It’s pretty much the same as monkey bread, but in portioned sizes and a shorter cooking time!
The Pioneer Woman goes into detail how to make them and has AMAZING photos. Here’s the quick version:
Put a pat of butter in the bottom of a muffin tin.
Add a teaspoon on top of that, then a teaspoon of cinnamon on top of that.
Next, open a can of Pillsbury biscuits. Separate all of them and cut em into quarters. Put 4 quarters into each muffin tin and add another pat to each.
Sprinkle on another teaspoon of sugar and cinnamon.
Pop em into a 375*F (190*C) oven and bake for about 15 minutes.
After that amount of time, most people would think they’re done….but the Pioneer Woman is a Southern gal! SO, you can drizzle some sweetened condensed milk on each of em. I stuck em back into the cooling oven for about 10 minutes so that the condensed milk liquified a little more.
My parents were suitably impressed and I think this might be a good “company breakfast”!
