Tortellini Alfredo with Artichoke Hearts

Tonight, I didn’t really feel like cooking dinner, so Keith volunteered to make his favorite meal for us.

Here’s what he did:
He lightly oiled a skillet and let the oil heat over low. As the skillet was heating, Keith crushed 3 cloves of garlic (add as many cloves of garlic as you think is enough).

He put the garlic in the warmed oil and added one can of quartered artichoke hearts. He sauteed it on low heat and stirred occasionally so the garlic didn’t stick to the pan.

Meanwhile, he boiled his favorite flavor of tortellini (three cheese) for 9 minutes in lightly salted water.  Just before the pasta finished boiling, he added a tub of alfredo sauce to the skillet of garlic and artichoke hearts.

After he drained the pasta, Keith added it to the skillet.   Then he seasoned the dish with salt and pepper.

One thing Keith would recommend is to add more garlic than you think you’ll like.  He said that he didn’t taste any of the garlic til after the meal was over.
